Buongiorno.. Dopo aver mangiato un pò di più in questi giorni.. ci vuole qualcosa di più leggero per disintossicarsi.. Una vellutata di zucca.. cavolini di Bruxelles e ceci alla quale ho aggiunto un pò di orzo nero.. L'ho servita con crostini.. semi misti.. scaglie di parmigiano.. un filo di olio e qualche goccia di tabasco.. ma voi potrete decidere per ciò che più vi piace...
E' una vellutata molto gustosa.. la zucca e i cavolini hanno dato un'ottimo sapore!
Ingr.: (per 5 persone)
gr. 850 di zucca (pesata con la buccia)
gr. 350 di cavolini di Bruxelles
1 barattolo di ceci lessi (o secchi)
gr. 100 di orzo nero
1 cipolla grande
olio extravergine di oliva
concentrato di pomodoro
dado granulare vegetale bio senza glutammato
2 lt circa di acqua
per guarnire:
semi misti
crostini
scaglie di parmigiano
Preparazione:
Sminuzzate la cipolla e fatela appassire in una casseruola a bordi alti.
Private la zucca della buccia e tagliatela a dadi
Pulite i cavolini privandoli della base e delle foglie esterne più rovinate e tagliateli a metà.
Unite la zucca e i cavolini nella casseruola e fate saltare un paio di minuti.
Scolate i ceci della loro acqua e aggiungeteli nella casseruola.
Versate l'acqua bollente, il dado granulare, un pò di concentrato di pomodoro e cuocete con coperchio semi-chiuso, a fuoco medio/basso per circa 1 ora e mezza, girando di tanto in tanto.
Frullate bene il tutto.
Aggiungete l'orzo e cuocete per ulteriori 30 minuti.
Fate intiepidire e servite guarnendo con crostini, semi misti, scaglie di parmigiano, un filo di olio e qualche goccia di tabasco.
